临近冬至,犍为县的农家开始杀过年猪了。近日,犍为县清溪镇清溪大饭店老板杨俊忠一家准备杀过年猪,并邀请了几个亲朋好友前来帮忙。现场驱赶猪、杀猪、烫猪、开边、割肉,大家忙得不亦乐乎,现场十分热闹。



据悉,杀年猪吃刨汤是我国许多地方的风俗,尽管时代在不断的变迁,但“吃刨汤”这个习俗始终没有“泡汤”。杀过年猪的传统过程主要分为四个步骤,杀、烫、刨、剖。而杀过年猪在《乐山话方言词典》解释为:刨汤,“因春节之前宰杀以供自家享用的肥猪而宴请邻里亲朋的一餐饭”。



“吃刨汤是主要是为了分享一下今年的劳动成果,联络亲朋邻里的感情,还有在过去物质比较匮乏年代,我们可以通过吃刨汤增加油荤,补充营养,同时也是为了祈求风调雨顺,来年大家的生活更加幸福美满。”市民王文明介绍道。



忙碌了大半天,杨俊忠在亲友的帮助下做好了几桌丰盛的午餐。血旺汤、头碗菜、蒸肥肠、甜咸烧白……十多个色香味俱佳的农家菜被端上了餐桌,大家围坐在一起,共享美食带来的喜悦与温馨。
